30 Days of Summer - Post #7 - Recipe: Fresh Strawberry Pie

Fresh Strawberry Pie
My friend, Cathy, shared this recipe with me several years ago and it continues to be a summertime favorite!

FRESH STRAWBERRY PIE

1 baked pie shell
1 quart fresh strawberries, rinsed and hulled
1 1/2 c. water
3/4 c. sugar
3 T. cornstarch
1 small box strawberry Jell-O

(Note: To bake the pie shell, line an unpricked pie crust with a a double layer of heavy-duty foil and bake at 450 degrees for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.)

Fill the pre-baked pie shell with the fresh strawberries.

Mix water, sugar, cornstarch, and Jell-O together in a saucepan. Bring to a boil and cook until the mixture begins to thicken.

Remove from heat, cool, and pour over strawberries.

Chill pie until ready to serve. Top with whipped topping, if desired.

Until next time...

  1. That sounds a lot like the strawberry pie recipe I used to make except I don't think mine called for the jello (seems like it was food coloring but I never added it). Love strawberry pie :)

    1. I think the strawberry jello makes it double-strawberry-ey...which makes it twice as yummy! :D

  2. Thanks for the recipe. Looks good. I'm going to look for a non-gmo type jello too.
